See a garlic and parmesan theme? Well, it is a great combo and I’ve had the recipe on file for quite a while making sure it is a winner over and over. After my last fiasco with a big name blogger’s horrible recipe disaster, I am not going to try them any time soon again. Too much money wasted on ingredients is a sad thing! And my time.
But anyway, simple seems to always be best and this is a sure winner. Fast since it is fish and easy because it only has a handful of ingredients.
**Double the butter, garlic, thyme and cheese if you have large filets. Mine were large and obviously did not get enough of the yummy topping. So, if you have small filets about the size of a deck of cards or a little larger, you should be fine. **
Baked Parmesan Tilapia
yield 4 servings
4 whole tilapia filets (fresh or frozen that have been thawed)
salt and pepper
3 Tbs. butter, room temp.
1 clove of garlic, minced or pressed
1/4 tsp. thyme (substitutes include: basil or oregano)
1/4 cup shredded parmesan cheese
1. Preheat oven to 400 degrees.
2. Season both sides of the fish with salt and pepper. Lay fish on a cookie sheet or casserole dish covered in foil and sprayed with cooking spray. Bake 10-12 minutes.
3. In small bowl, mix butter, garlic, thyme and Parmesan cheese.
4. Flip fish over and evenly divide mixture between fish and spread. Broil fish 2-3 minutes. Cheese will get light brown and bubble.
**Freezer Fixing tip: I have made fish before where the topping are frozen with the fish already. Though with the cheese, I’m not sure this will work, you could have the cheese/butter pre-mixed and frozen separately with the fish. Thaw everything in the fridge overnight and you are all set to go.
